The sweet "cuddureddu" has been officially recognized and included in the list of Traditional Agri-food Products (PAT in Italy) from the Sicily Region to safeguard tradition. The monasteries and convents have always kept secret recipes of biscuits, pastries and cakes, later discovered through the indiscretions of lay collaborators of the nuns or of "orphans" who had spent their lives in the monastery.
